Spain

Campo de Montalban is a cow, sheep and goat’s milk cheese from La Mancha, Spain. The cheese is always made from 40% goat, 40% sheep and 20% cow’s milks. The use of three different milks adds depth to the flavor, as you can taste each one, as well as the variety of the herbs and grasses that three different animals were eating. Aged 90 days, the texture and appearance are similar to Manchego. Indeed before the Manchego DOP in 1985, this was considered a Manchego cheese. Bleu d'Auvergne

France

If Roquefort is the assertive 'King of Blues' then the even-tempered Bleu d'Auvergne is the prince. Though both were developed early in the 19th century, are currently AOC protected, and made with a similar recipe, the difference lies in milk type, region and intensity. This blue, made from raw cow's milk, is mellow and meaty, taking its name from the region of origin while Roquefort is a spicy sheep from down south. So while he may not be the life of the party, well balanced salt and spice makes d'Auvergne a perfect companion for cooking or for winding down with some Barsac dessert wine.

Fromager d'Affinois

France

Fromager d'Affinois is from France’s southern Rhône-Alpes region and is similar to brie in appearance and flavor. This concentrates all of the other components allowing for a rapid acceleration of the cheesemaking process, a more luscious texture and a higher protein and calcium content. Its bloomy white rind surrounds a seductively soft interior and its mild and buttery flavor features a hint of sweetness that is nicely accentuated by fresh fruit.
