Try out this quick, easy, and nutrient-dense version of a holiday favorite – eggnog. I used Swerve confectioner’s style sweetener as a zero-calorie, plant-based alternative to sugar. Perfect as a guilt-free dessert, snack, or post-workout treat! Rich in protein, low in added sugar, and delicious!
Eggnog Frozen Yogurt
Makes approximately 8 four-ounce servings
24 ounces Chobani 0% Greek yogurt, plain
8 ounces Califia Farms Almond Milk Holiday Nog or Silk Original Nog
1/4 cup Jello sugar-free instant vanilla pudding mix
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/2 teaspoon rum extract
3 tablespoons Swerve confectioner’s style sweetener
Date and Cashew Crumble
6 dates, pitted
1/4 cup cashews
Place all ingredients except dates and cashews in a bowl. Whisk until smooth. For mousse, refrigerate for 30 minutes. For frozen yogurt, freeze for approximately 2 hours.
Blend dates and cashews in a food processor until granola-like texture.
Top mousse or yogurt with light whipped cream, cinnamon, and 1/2 teaspoon of date + cashew crumble if desired.
Per serving: 80 calories, 0.5 gram fat, 0 saturated fat, 210 mg sodium, 14 grams carbohydrate
(10 grams net carbohydrate), 0 fiber, 6 grams sugar (2 grams added sugar), 8 grams protein
