Grilled Salmon Stuffed Avocados

Salmon Stuffed Avocados
Serves 2-3
WestCoast_4_RecipeIngredients:

1 lb Salmon
2 Large Avocados
3 Sweet Peppers
1 Bunch of Green Onions
12-15 Halved Grape Tomatos
2 Cloves of Chopped Garlic
1/2 c Olive Oil (We recommend Bill Sanders California First Fresh Extra Virgin Olive Oil)
1/4 c White Wine Vinegar
1 lemon
1 tsp Agave or Honey
1 tsp Garlic Powder
Salt / Pepper to taste

Procedure: 
Prepare Salmon : Lay salmon out and dap dry with paper towel. Drizzle Olive Oil. Sprinkle with chopped garlic, salt and pepper. Place on side until ready to grill.
 
Prep Vegetables : Cut each Avocado in half, remove pit. Chop 2-3 stems of Green Onions, Sweet Peppers, Garlic Cloves and Tomatoes.
Make Dressing : Combine Olive oil, White Wine Vinegar, Agave, Garlic Powder, Lemon Juice, Salt and Pepper. Mix in Chopped Sweet Peppers, Green Onions and Tomatoes. Keep some green onions for garnish.
 
Cook and Serve: Grilled Salmon until cooked. Let cool before adding into dressing mixture. Mix well. Scoop into Avocado halves, garnish with green onions. Enjoy!
